When it began producing in 2008, this craft whisky-making operation was the first Japanese whisky distillery to open since 1973. Ichiro Akuto has insisted on a hands-on approach, with an onsite cooperage and production of just 90,000 litres a year.

Tasting Notes

Colour

Sunlit golden amber with a warm honey hue and subtle coppery shimmer.

Nose

Honeyed lemon herbal tea opens the aroma, with buttery popcorn, ginger warmth and a whisper of eucalyptus.

Palate

Immensely complex, revealing banana, pineapple, apricot, orange blossom, and more honey.

Finish

A lightly bitter, IPA-style hop note lingers, then the finish is dominated by confected raspberry and pineapple chewy sweets.

Chichibu
(chee-CHEE-boo) Chichibu was founded by Ichiro Akuto and began distilling in 2008 in Saitama Prefecture, at a time when new Japanese whisky distilleries were still rare. Akuto had already made his name by rescuing casks from his family’s closed Hanyu distillery and bottling them as Ichiro’s Malt, so Chichibu arrived with a strong sense of continuity as well as a fresh start.
