American whiskey includes a broad range of styles defined by the grains used in the mash bill, the production method and the type of oak used for maturation. Bourbon must be produced in the United States from a mash containing at least 51% corn and matured in new charred oak. This commonly develops flavours of vanilla, caramel, toasted oak, baking spice and sweet corn, although the finished character varies considerably between producers and recipes.
Rye whiskey must contain at least 51% rye and generally offers a drier, spicier profile, while Tennessee whiskey is produced in Tennessee and, with a narrow legal exception, filtered through maple charcoal before maturation in new charred oak.
