Distilled from molasses at a column-still distillery in Trinidad, the base spirit matures for up to two years in charred American-oak barrels before being charcoal-filtered and blended with a secret mix of eleven spices, including cinnamon, clove, ginger and vanilla. A portion of “blackstrap” molasses and a hint of caramel give the finished rum its dramatic, almost ink-black hue – a nod to the legendary beast’s inky defence.
