Spot Whiskey is a family of single pot still Irish whiskeys produced at Midleton Distillery in County Cork for Mitchell & Son, the Dublin wine and spirits merchant. Its roots go back to Ireland’s old bonded whiskey trade, when merchants bought new make spirit from distilleries and matured it in their own casks, often using wine and fortified wine casks from their existing business.
