Bourbon whiskey is an American whiskey style made from a mash containing at least 51% corn and matured in new charred oak containers. Although strongly associated with Kentucky, bourbon can legally be produced anywhere in the United States, with the grain recipe, distillation method and maturation conditions all influencing the final character.

Kentucky remains the best-known centre of bourbon production and is home to many of the category’s most famous distilleries, including Buffalo Trace, Maker’s Mark, Woodford Reserve, Wild Turkey and Four Roses. Producers in other states have also developed distinctive styles, helping broaden the range of bourbon available beyond its traditional heartland.

The high proportion of corn typically gives bourbon a naturally sweet foundation, while new charred oak can contribute flavours of vanilla, caramel, toffee, spice and toasted wood. Bourbon must be distilled to no more than 80% ABV, entered into the barrel at no more than 62.5% ABV and bottled at a minimum of 40% ABV, while bottles labelled Straight Bourbon must meet additional ageing requirements.
