The category can include whisky, rum, Cognac, brandy and other exceptionally old spirits, although age-statement rules vary between different spirit types and countries. In whisky, the stated age generally refers to the youngest spirit used in the final bottling, while other categories may follow different maturation and blending conventions.

Very few casks remain suitable for bottling after 50 years or more, as long maturation brings significant evaporation and increasingly strong oak influence.
