Chichibu distillery was founded in 2004 by Ichiro Akuto, and has been operational from 2008, it was the first new Japanese distillery since 1973. Ichiro Akuto is the grandson of the founder of the lost distillery at Hanyu.

Chichibu is located near the site of the former Hanyu distillery.

Tasting Notes

Colour

Golden amber with sunlit honey and coppery reflections.

Nose

Fresh and radiant nose, with orchard fruits - green apple, pear, a hint of peach - dancing with citrus zest. Vanilla-soaked malt, honey, and a touch of creamy toffee weave through soft spice, while delicate floral notes and a whisper of oak lend elegance and coastal brightness.

Palate

Silky and full-bodied, the malt coats the palate with creamy vanilla, honeyed sweetness and bright citrus zest, supported by orchard fruit. Spices develop—cinnamon and clove—alongside a warm, oak-driven spine. The finish is long and refined, with toasted almond, dried fruit and a subtle maltiness lingering.

Finish

Silky, long finish that unfurls with warm vanilla and creamy toffee, bright citrus zest, and delicate spice. Subtle oak notes linger with a whisper of orchard fruit, gradually giving way to a refined sweetness that invites the next sip.

Chichibu
(chee-CHEE-boo) Chichibu was founded by Ichiro Akuto and began distilling in 2008 in Saitama Prefecture, at a time when new Japanese whisky distilleries were still rare. Akuto had already made his name by rescuing casks from his family’s closed Hanyu distillery and bottling them as Ichiro’s Malt, so Chichibu arrived with a strong sense of continuity as well as a fresh start.
