Chichibu distillery was founded in 2004 by Ichiro Akuto, and has been operational from 2008, it was the first new Japanese distillery since 1973. Ichiro Akuto is the grandson of the founder of the lost distillery at Hanyu.
Chichibu is located near the site of the former Hanyu distillery.
The 2019 Paris edition was matured in a combination of Mizunara and Bourbon barrels, yeilding only 1757 bottles. Bottled at cask strength, expect notes of summer fruits with a hit of pepper.

Nose
Juicy summer fruits—peach, apricot and melon—rise with warm Mizunara spice and Bourbon vanilla. A peppery edge threads through cedar and toasted oak, with a faint coconut nuance lingering in an inviting, aromatic glow.
Palate
Juicy summer fruits—peach, apricot and berries—meet a peppery kick on the palate. Mizunara spice flirts with bourbon vanilla and oak, adding depth and a velvety, full-bodied texture. Warm cask-strength momentum carries into a long, pepper-bright finish.
Finish
Long, warm and refined, the finish carries Mizunara spice and Bourbon vanilla, echoing ripe summer fruit as a peppery, oak-kissed fade lingers. A subtle incense-like warmth stays on the palate, tapering to a graceful dryness.
