Subjected to extensive ageing without a ‘flor’ yeast layer, Oloroso, which roughly translates to ‘fragrant’, is the darkest dry Sherry style renowned for its pronounced nutty, dried fruit qualities. Maturation in well-seasoned Oloroso butts has delivered bold layers of coffee beans, sticky raisins, stem ginger and figs that all work in tandem with The GlenAllachie’s honey-rich house style.

Colour
Deep mahogany amber with bronze-copper highlights and a warm, honey-gold glow.
Nose
Heather honey, mocha and dried apricots lead the aroma, completed by cinnamon butter, red velvet cake and marzipan—a warm, confectionery richness with a hint of toasted depth from the Oloroso influence.
Palate
Dark chocolate, honeycomb and butterscotch begin on the palate, evolving into dried red berries, ginger and damsons. Poached apples with muscovado sugar finish the mouth, leaving a warm, honeyed persistence and subtle spiced notes from the Oloroso maturation.
Finish
An extended, warm finish of dark chocolate and espresso, unfolding into dried fig, raisin and ginger. Honeyed oak lingers with poached-apple sweetness and muscovado, leaving a velvet, comforting embrace.
