Rich amber-gold with coppery highlights and a honeyed glow; a deep, sunlit hue that hints at toasted oak and maturity.
Nose
Vanilla bean and caramel from American ex-bourbon oak mingle with creamy toffee and toasted almond. French oak adds refined spice—white pepper and clove—alongside cocoa-dark depth. Orchard fruit notes rise, poached pear and white peach, lifted by citrus zest with a whisper of coconut and a hint of maritime Tasmanian air.
Palate
Silky on the palate, this Double Cask unfurls vanilla and caramel from American ex-bourbon oak with refined spice from French oak. Subtle toffee deepens with orchard fruit and citrus lift, while toasted oak, white pepper and a trace of cocoa weave through. Medium-bodied, balanced sweetness, and a lingering oak-driven warmth.
Finish
Silky and persistent, the finish unfurls vanilla and caramel sweetness from the bourbon cask, folded with refined spice from the French oak. Subtle cocoa and citrus notes linger, easing into a warm, velvety fade with a restrained tannic edge.
