Located on the Fleurieu peninsula, and run by ex-brewers Gareth and Angela. Fleurieu have had a meteoric rise to fame in the Australian whisky scene, picking up a whole host of awards for their highly popular bottlings.
Fleurieu’s copper pot stills are modelled after Coal Ila’s, they run a super long 8 day ferment, using brewers yeast. There’s often a noticeable salinity, and trademark Caol Ila meatyness to their whiskies.

Briny sea air with iodine and a Caol Ila‑style meaty smoke. Coastal salt and mineral backbone, bright citrus zest, and vanilla from youthful barley peek through the maritime heft.

Oil-coated and brisk, with a maritime pulse of sea salt and iodine. Caol Ila‑style meaty smoke threads through toasted barley and a hint of citrus sweetness, then deepens into briny seaweed, pepper, and mineral dust. The warmth lingers, leaving a saline, smoky finish with balanced sweetness.
Finish
Maritime and bracing, a saline kiss that lingers with Caol Ila‑style meatiness. Coastal iodine threads through a light peat aroma, followed by peppery spice and a whisper of warm malt, fading into a long, softly smoked finish with subtle oak.
