The second batch of TBWC Fleurieu is one of their peated malts. It’s been matured in an ex-Apera cask, the Australian variant of Sherry (made by the same method, although unable to be called sherry outside of the sherry triangle) and bottled at natural cask strength.

Tasting Notes
Colour
Deep amber with coppery-red highlights and a warm mahogany glow.
Nose
Peat smoke and brine rise first, with oxidative fruit from the ex-Apera cask—raisin, fig, and dried orange zest. Dark toffee and caramel mingle with almond, vanilla, and a hint of leather, while a coastal, mineral edge keeps it bright. At natural cask strength, the nose is bold, vibrant, and inviting.
Palate
Powerful peat greets the palate, tempered by sherry-tinged sweetness from the ex-Apera cask. Dried fig and raisin mingle with cocoa, toffee and a whisper of leather. Spiced orange peel and black pepper lift the mid-palate, while nutty oak and a long, smoky finish linger at natural strength.
Finish
Long, warming finish: peat smoke lingers beside a cloak of dried fruit—apricot, fig and raisin—while dark chocolate, toffee and subtle spice from the ex-Apera cask unfold. The high ABV leaves a resinous warmth that slowly fades into oak and a lasting, sweetly toasted finish.
