Tasting Notes

Colour

Deep burnished amber with honey-gold facets and coppery glints.

Nose

Sweet black coffee and a whisper of shellac open the nose, unfolding into dark fruit richness: blackberries giving way to blackcurrants, blueberry muffins, sour cherry and dried plums. A sly hint of salty liquorice lingers.

Palate

Complex palate of Chinese salted cherries, coffee grounds and bitter dark chocolate, with Cognac-like richness weaving through.

Finish

A long finish that opens with spice, dries to a chocolatey bite, and lingers with fruity sweetness and a pinch of salt.

Willowbank (silent)
Willowbank was established in Dunedin by the Baker family, with distillation beginning in 1969 and whisky released under the Wilson’s name from 1974. It became the centre of modern New Zealand whisky for much of the late 20th century and was known under several names, including Willowbank, Wilson’s, Lammerlaw and Milford. At the time, it was also regarded as the world’s southernmost whisky distillery.
