Bakery Hill buck the trend of many wine-cask driven Australian whiskies, favouring predominantly ex-bourbon barrels. These allow for a longer maturation, without the spirit becoming overwhelmed by the hot temperatures and cask influence.

Nose
Vanilla and coconut rise with creamy depth from light, toasty oak. Bright citrus zest and green apple refresh the nose, while a delicate almond note and gentle spice hint at bourbon-influenced maturation. A youthful, vibrant bouquet, balanced and polished, with the warm, sunny character of Australian maturation.
Palate
Rich, creamy palate of vanilla bean from ex-bourbon oak, toffee and a whisper of coconut, layered with gentle spice—cinnamon and white pepper—bright citrus zest fades to warm caramel. Silky mouthfeel, balanced and approachable, with a lasting, softly oaked finish.
Finish
Silky vanilla and caramel linger into a long, warm finish, carried by creamy toffee and a kiss of oak. Bourbon sweetness fades to subtle biscuit and light citrus zest, with a gentle spice that lingers. Balanced, refined, and warming without overpowering the whisky’s delicate fruit.
