Tasting Notes

Colour

Rich deep amber with golden honey highlights and a warm, sunlit copper glow.

Nose

Dried mango and a fresh bag of banana chips, mingling strawberries and cream with toasting coconut and poached apricots, carried by an aromatic rummy note and a subtle hint of Cuban cigars.

Palate

Toasted coconut mingles with rye sourdough, a hint of star anise and fresh sappy figs; dragon fruit and maple syrup moving through to condensed milk, butterscotch, marzipan and nougat, with a cleansing line of spearmint.

Finish

Cantaloupe gives way to a bloom of sweet orange juice and canned peaches, with a touch of earthy brightness. Coconut lingers with kaffir lime leaf, finally wafting the perfumed nuance of fine green tea.

Sullivans Cove
Sullivans Cove was founded in 1994 on Hobart’s waterfront and is one of the early names in modern Australian single malt. In 2004, the distillery moved to Cambridge and entered a new phase under Patrick Maguire, a period that helped establish the house style and build its reputation well beyond Tasmania. In 2014, Sullivans Cove became the first distillery outside Scotland and Japan to win World’s Best Single Malt at the World Whiskies Awards.
