Tasting Notes
Colour
Deep amber with copper-gold highlights and a warm mahogany core, like light through aged wood.
Nose
An Islay tour in a glass: coastal peat smoke mingles with cured meats and old leather, lifted by smoked vanilla fudge. Sooty root vegetables and earthy beetroot weave through the aroma, finishing with lime curd and a whisper of green chili.
Palate
Prickly pears over sooty white ash smoke, green peppers, anise, clove, lime pickle, smoked seafood with light soy sauce and creamy wasabi with vanilla.
Finish
Green fruit and peppery root vegetables, sooty lime, minty smoke and the whiff of wet earth or grass after a summer shower of rain.
