Without the support and advice of the Yalumba wine making and coopering team, Starward’s signature flavour cues and ground-breaking aging process may never have been realized. The Yalumba Octaves were the original red wine barrels that they used to age what we now know Nova to be.

Tasting Notes

Colour

Coppery amber with a warm ruby sheen.

Nose

Ripe red fruit dominates—black cherry, raspberry and plum—with currant and fig from the Yalumba Octave barrels. Wine-soaked oak brings vanilla, toffee and spice—cinnamon, clove—plus a whisper of cedar. A velvety, inviting nose that hints at depth and warm winery sweetness.

Palate

Silky and fruit-forward, the palate shows red berry richness—raspberry and cherry—with wine-barrel nuances of vanilla, toffee, and spice. A creamy mouthfeel, light tannic lift, and rounded oak sweetness carry into a warm, persistent finish.

Finish

Long and warming, the finish carries red fruit notes—raspberry and cherry—softened by creamy vanilla and cocoa, with gentle oak spice and a touch of red wine tannin that lingers gracefully.

Starward
Starward was founded in Melbourne in 2007 by David Vitale, with the aim of creating a distinctly Australian whisky shaped by the city’s food, wine and brewing culture. Produced at the Starward Distillery in Port Melbourne, its whiskies use Australian grains and ingredients sourced largely from within a day’s drive. Malted barley is fermented with brewers’ yeast to develop a bright, fruit-forward spirit, while the city’s frequently changing temperatures increase the whisky’s interaction with the oak during maturation.
