Tasting Notes
Colour
Deep, dark amber with coppery-bronze highlights and mahogany undertones.
Nose
An intense attack of dark beeswax, smoked tar, smoked fish, sherry-soaked raisin, salty treacle, rich dark oak, stewed dried fruits and old tea chests.
Palate
Sweet, syrupy and tarry with a smoky backbone. Raisins steeped in dark sherry lend an opulent fruitiness alongside smoky coffee grounds, an earthy, truffle-like mouthfeel, notes of black gunpowder tea, seaweed and coal tar.
Finish
Smoked mackerel marinated in dark soy, with rich, sweet sherry, salty cured meats, BBQ smoke, and lingering notes of raisin and truffle.
