Known for its pale appearance and delicate flavour profile, Fino is the driest style of Sherry. It must be biologically aged for at least two years under a ‘flor’: a yeast layer which prevents oxidation. Maturation in former Fino hogshead casks has resulted in a single malt bursting with stewed pear, sugared almonds and vanilla custard tones.

Tasting Notes
Colour
Pale straw with a delicate whisper of sunlit gold.
Nose
Nutmeg lingers with heather honey and vanilla extract; butterscotch and green apple peel mingle with stone fruits, while roasted almonds add a toasty, inviting finish.
Palate
Dried apricots and honeycomb lead into silky butterscotch, followed by baking spices, marzipan and caramel, with orchard fruits and a bright citrus finish.
Finish
Orchard fruits and bright citrus linger gracefully, with a velvet echo of baking spices, marzipan and caramel rounding out the warmth.
