While sherries such as Pedro Ximénez and Oloroso are well known in single malt maturation, Moscatel is far more rare and unusual. Moscatel grapes are noted for their floral aromas, thriving in sandy soils with vineyards situated close to the beaches of Spain’s sherry region – an ideal match for Filey Bay whisky, made on the Yorkshire Coast.

The whisky is produced using the distillery’s unique solera-style approach, more accurately described as a fractional blending method. Each time Filey Bay Moscatel Sherry Cask is bottled, it is replaced with older casks carefully selected from the warehouse. This maintains a consistent flavour profile while allowing the whisky to gain age, depth, and complexity. It is a true reflection of the distillery’s character as it matures.
