The sixth release in this annual series is matured in first-fill ex-Oloroso casks drawn from deep within the warehouse. The distillery last used only Oloroso casks for a Sherry Cask Reserve release in its inaugural bottling in 2020. Whisky Director Joe has expressed particular enthusiasm for this edition, noting that “not only is the colour spectacular but the depth and character of the spirit is a once-in-five-year release.”
Oloroso sherry is known for its complexity and character, offering nutty and fruity notes that sit at the darker end of the sweet-shop flavour spectrum. It complements Spirit of Yorkshire's lighter distillery character particularly well, allowing rich, treacle-like flavours to shine through.

Tasting Notes
Colour
Deep amber with mahogany edges and a coppery halo; a glossy, treacle-dark hue that catches the light with rich, red-gold warmth.
Nose
Opulent sherry-led bouquet with fig and raisin fruit, roasted almond and walnut nuttiness, and a glossy treacle sweetness. Dark chocolate, orange zest, and caramel drift over polished oak, while subtle spice lingers. The ex-Oloroso cask deepens the aroma with fruitcake richness and warm oak, yet preserves a bright distillery lift—an inviting, velvety start to this sixth Filey Bay release.
Palate
Silky and robust, the palate delivers treacle and burnt sugar with fig, prune and walnut notes. Dried-fruit depth sits beside almond and dark chocolate, lifted by a glint of orange zest. Sherry richness, spice and a touch of oak linger long with velvety warmth.
Finish
Long, warm and indulgent, the finish drapes nutty almonds, fig and raisin in treacled sweetness, with cocoa and spice notes lingering as Sherry-Oloroso depth slowly fades into oak.
