Signatory Vintage Scotch is one of the most discerning independent bottlers of Scotch in the world. They bottle one cask at a time, capitalizing on the unique colour and flavour characteristics of each individual cask.

By sourcing all-natural malts from the best distilleries in Scotland, selecting the best single batches and bottling only the finest casks within those batches. The resulting “single, single, single malt” this is about as exclusive it gets.

Tasting Notes

Colour

Dark amber with coppery-bronze highlights and mahogany-tinged edges, a rich, sherry-warmed glow.

Nose

Peat smoke, iodine and sea-spray lead the aroma, carried by a shore-side breeze. Rich sherried fruit unfolds—fig, raisin and cocoa—woven with warm caramel, vanilla and toasted oak. Hints of leather and spice add depth, while a faint maritime salt lingers on a long, contemplative finish.

Palate

On the palate, Port Ellen delivers a luxurious coastal peat with velvety sherried sweetness. Dark fruit compote—prunes, figs, black cherry—meets medicinal iodine, espresso and a touch of char. The mouthfeel is opulent, cinnamon-spice warmth binding a dry, lingering smoke and maritime finish.

Finish

Long, maritime finish where peat and sherry entwine, releasing dark chocolate, fig and dried fruit. A sea-salt kiss and subtle leather weave through as sweetness fades, leaving a refined, warming finale of spice, tannin and oak that lingers.

(Port-Ellen) As far as many people are concerned, Port Ellen is one of the great lost distilleries of Scotland. Port Ellen Whisky was founded in 1825 on the south shore of Port Ellen Islay by A. K. Mackay & Co. Closed in 1983 after being mothballed between 1930 and 1967. And with three Islay distilleries on the hands of the owners Port Ellen was the one to close with Caol Ila and Lagavulin surviving the 1980s closures.
