Tasting Notes
Colour
Deep burnished amber with mahogany depth and a coppery, shimmering edge.
Nose
Smoke-laden, maritime nose with smoked raisin and tarry fruitcake at the core. Savory threads of black bean sauce mingle with sea kelp and black seaweed, while coal smoke and ashy black treacle deepen the profile. Subtle gunpowder tea and toasted rye add mineral toastiness, finished with a saline kiss of smoked sea salt.
Palate
A very distinctive mix of sweet, sooty smoke with chewy dark fruit, smoked pecans and dark treacle. Sherry-soaked Christmas cake folds into the richness, while a saline, charred seaweed note underpins the finish, leaving a warm, lingering spice.
Finish
Long, smoky finish of treacle tart and salted toffee, with toasted pecans and sooty sweet sherry. Dark aromatic spices unfold, punctuated by salty chilli flakes and black tea-smoked cured meats, leaving a maritime, warming glow.
