Togouchi Japanese whisky is very interesting in its creation. It has been created by Chugoku Jozo. The company imports Scottish malt whisky and Canadian grain whisky. Once these are in Japan they are left to mature in a mixture of sherry and brandy casks. They are matured in an old railway tunnel too! This 12 year old version is heavily peated.

Tasting Notes
Colour
Deep amber with a coppery sheen and mahogany undertones, a warm, inviting hue.
Nose
Heavy peat smoke mingles with sherry-brandy sweetness, releasing dried plum, fig and dark chocolate with vanilla. Subtle orange zest and spice weave through the aroma, while oak and a damp, minerally undercurrent from the railway-tunnel maturation add depth. The result is warm, refined, and inviting, with a lingering, smoky finish.
Palate
Heavy peat coats the palate with a medicinal, smoky bite that stays refined. Sherry- and brandy-cask influence delivers rich dried fruit—raisins, fig, touches of plum—woven with dark chocolate and toffee. Vanilla, oak and subtle spice thread through, culminating in a peppery lift. The finish is long and smoky, with coastal minerality and a balanced, dessert-like sweetness lingering.
Finish
Long, smoke-tinged finish with bold peat that gradually softens into sherry-rich fruit—raisins and figs—beneath a warm vanilla and oak sweetness. A trace of cocoa and leather lingers, while a subtle mineral, tunnel-aged edge keeps it poised and enduring.
