Tasting Notes

Colour

Sunlit gold with a warm honey-amber glow.

Nose

A delicate bouquet of rose petals and lemongrass, lifted by bright orchard fruits; elegant, floral, and inviting on the nose.

Palate

Softly spicy and warming, with floral rose and heather weaving through crisp apples and orange, delivering a delicate, perfumed fruit core.

Finish

Richer notes linger with honeycomb sweetness, dried fruits and cocoa, a warm, velvety finish that coats the palate and lingers softly.

Spirit of Yorkshire
Spirit of Yorkshire was founded in 2016 by farmer and brewer Tom Mellor and business partner David Thompson. Based in Hunmanby, near Filey on the Yorkshire coast, it grew from the Mellor family’s farming background and Wold Top Brewery, using home-grown barley and local water to create Yorkshire’s first single malt whisky.
