It is highly unusual to find a Single Malt matured in IPA casks, in this case Filey Bay has matured their spirit in Scarborough Fair IPA casks. This has imparted light, fruity and biscuity aromas with notes of green apple, pear drops, lemon cake and hops.

Light, fruity, and biscuity on the palate, with a malt-forward body carrying green apple and pear drop sweetness. Lemon cake notes mingle with a gentle hop bitterness, delivering a crisp citrus lift and a dry, biscuity finish.
Finish
Persistent finish of crisp green apple and pear, fading into lemon cake and biscuit. A delicate hop lift adds citrus zest and a touch of bitterness, carried by warm malt. Clean, balanced and gently braced by IPA brightness that lingers pleasantly.
