Tasting Notes
Colour
Pale straw gold with a warm honey-gold glow.
Nose
Delicate, perfumed nose of white flowers, beeswax and honeyed pears, with lemon zest and green apple. A soft sherry warmth unfolds into dried fruit, almond paste and a kiss of polished oak. Ethereal and refined, it carries rose-petal sweetness and a subtle mineral backbone.
Palate
Silky, lightly waxy and bright, the palate opens with orchard fruit—green apple, pear—kissed by lemon zest and honey. A refined mineral backbone supports delicate sherry-influenced notes of dried apricot, almond, and cocoa, with a whisper of spice. At 50% ABV the warmth is integrated, finishing with citrus lift, subtle oak and a lingering floral sweetness.
Finish
Elegant, lingering finish that coats the palate with orchard fruit and citrus, with a delicate sherry sweetness unfolding into almonds and honey. A fine thread of oak and white pepper keeps it poised, drying slowly to a perfumed, floral finale that lingers with grace.
