An Australian apera cask — the Aussie equivalent of a sherry cask, this one feels closest in flavour to a palo cortado — filled with waxy Dailuaine.
It has spent ten years quietly maturing in a refill bourbon hogshead. With just under a year in the apera before bottling, it was matured at the very top of the warehouse, through a warm Scottish summer and a long winter. It’s a big dram for spring.

Tasting Notes
Colour
Deep amber with a warm copper glow and burnished chestnut edges.
Nose
Charred and toasted, red apple and yellow pear emerge alongside autumn fruits and spice. Roasted almonds, hazelnuts and walnuts mingle with bitter orange zest and dried apricot.
Palate
Warming and richly textured, it coats the palate with a satin-like sheen. Toffee and caramel mingle with red apples, while roasted almonds and walnuts add nutty depth. The fruit persists through a waxy, mouth-filling body, with a touch of spice and a long, lingering finish accented by herbal notes.
Finish
Long and fleshy, the finish lingers with red grape skin and red apple, weaving a gentle nuttiness with a herbal twist that slowly fades to a warm, contemplative echo.
