Distillery Bottling

Matured in American Oak Bourbon and European Oak Oloroso Sherry casks to give exceptional flavour and complexity. Triple distilled and crafted from a mash bill made entirely of Irish barley. Rich, honeyed maltiness and soft notes of candied fruit come from the double maturation.

Deep amber-gold with warm honey tones and a coppery sheen.

Nose

Delicate honied malt aromas, gently layered with soft candied fruit and a whisper of oak. The scent hints at double maturation—American Oak Bourbon and European Oak Oloroso Sherry—creating a warm, inviting sweetness that lingers.

Palate

Candied fruit floods the palate, bursting with sweetness and fig, carried by honeyed malt and subtle oak spice from double maturation.

Finish

Sundried raisins fuse with seasoned oak spices, leaving a warm, lingering note of fruit and spice.

The Irishman was created by Bernard and Rosemary Walsh as part of Walsh Whiskey’s move into Irish whiskey in the mid-2000s. It was the company’s first whiskey brand, launched in 2007, and it drew on older Irish whiskey styles at a time when the category was still rebuilding its premium reputation.
