Tasting Notes
Colour
Deep natural amber with a warm copper-red glow and a hint of ruby along the rim.
Nose
Redcurrant jelly and crunchy cranberries fuse with earthy depth and a whiff of an old dunnage warehouse; stewed red plums, rhubarb and ripe fig mingle with subtle smoke, peppery oak, Parma ham and aniseed.
Palate
Salted red berries, earthy and leathery with a hint of forest floor. Peppery shortbread lines the mid-palate, followed by redcurrant and rosemary jelly, smoked cured meats, and stewed plums with port. A savoury-sweet balance that lingers with smoke and wine-kissed tannins.
Finish
Dry wine tannins frame a long, savoury finish of crunchy red berries, rosemary and aniseed, with glace cherry, smoked nougat, tawny port and smoked cheese rinds.
