Signatory Vintage Scotch is one of the most discerning independent bottlers of Scotch in the world. They bottle one cask at a time, capitalizing on the unique colour and flavour characteristics of each individual cask.

By sourcing all-natural malts from the best distilleries in Scotland, selecting the best single batches and bottling only the finest casks within those batches. The resulting “single, single, single malt” this is about as exclusive it gets.

Colour

Deep copper-amber with mahogany edges and a ruby-wine glow, a warm, port-influenced hue.

Nose

Port Ellen’s peat and sea-spray rise on a lavish wave of Port-wine sweetness. Dark fruit compote—prune, fig, cherry—unfolds with cocoa, toffee and a whisper of toasted oak. Spice notes of clove and cinnamon mingle with resin and smoke, while a refined herbal edge and marzipan add depth to a bold, silken aroma.

Palate

Opulent and full-bodied, this Port Ellen coats the palate in a velvety, syrupy texture with pronounced port-cask influence. Rich dried fruit—prune, fig, black cherry—meets dark chocolate, caramel and a kiss of spice. Subtle peat smoke threads through, finishing long, warming and gracefully smoky with lingering fruit.

Finish

Long, sumptuous finish where port-wine sweetness coats dried fig and black cherry, drifting into soft peat smoke, dark chocolate and toasted oak. Spices linger as the warmth fades, leaving a refined maritime echo that invites the next sip.

(Port-Ellen) As far as many people are concerned, Port Ellen is one of the great lost distilleries of Scotland. Port Ellen Whisky was founded in 1825 on the south shore of Port Ellen Islay by A. K. Mackay & Co. Closed in 1983 after being mothballed between 1930 and 1967. And with three Islay distilleries on the hands of the owners Port Ellen was the one to close with Caol Ila and Lagavulin surviving the 1980s closures.
