Colour
Deep, burnished amber with coppery edges and a mahogany undertone, glowing with sun-warmed richness.
Nose
A briny coastal aroma of seaside sweets melting in the air, with the harbour’s scent and the day’s catch drifting in on a salty breeze. Lime cordial and mineral notes mingle with cooked green vegetables, a touch of wasabi, white pepper, and a delicate almond undertone.
Palate
White pepper on white grapefruit drives a saline, oily mouthfeel, with almond and pear-drop sweetness balanced by lime curd. A whisper of smoke lingers, finishing with spicy aniseed.
Finish
Preserved lemon and lime linger with a salty almond and white pepper lift, while tinned grapefruit and boiled sweets unfold, finishing with a delicate note of green pea and garden herbs.
