Tasting Notes
Colour
Deep golden amber with warm copper highlights and a touch of mahogany.
Nose
Fresh, inviting ash and smoke rise with a briny edge of oysters, lemon and salt. Notes of capsicum and seaweed flakes mingle with sourdough bread, white pepper and a whisper of smoked cream soda. Beneath, green banana, wild fennel and heather lend a herbal lift to the sea-scalloped aroma.
Palate
Vibrant, vegetal and spicy at first, with green peppers, fennel and seaweed, then sweet and creamy, tempered by sooty white pepper and ash; the smoke softens into oily, salty soy sauce with lime notes over shellfish.
Finish
Wasabi-like heat lingers, with notes of anise, salted lime, smoked vanilla, sourdough bread, green peppers and sooty, poached pears.
