Tasting Notes
Nose
Fresh, inviting ash and smoke rise with a briny edge of oysters, lemon and salt. Notes of capsicum and seaweed flakes mingle with sourdough bread, white pepper and a whisper of smoked cream soda. Beneath, green banana, wild fennel and heather lend a herbal lift to the sea-scalloped aroma.
Palate
Vibrant, vegetal and spicy to begin with green peppers, fennel and seaweed then sweet and creamy with sooty white pepper ashy smoke developing into oily, salty,soy sauce, lime juice over shellfish.
Finish
Wasabi like heat with notes of anise, salted limes, smoked vanilla, sourdough bread, green peppers and sooty poached pears.
