Tasting Notes
Colour
Deep amber with a coppery glow and honeyed-gold highlights.
Nose
Coastal honey, heather and vanilla mingle with rich sherry from first-fill European and American oak, plus notes of ex-bourbon. A gentle peat smoke threads through dried fig and raisin, with almond, cocoa and toffee. Maritime minerals and a touch of spice lift the aroma, finishing with polished oak sweetness and a warm, elegant glow.
Palate
Silky, medium-bodied and elegantly balanced, Hillhead reveals a harmonious trio of cask influences. On the palate, orange zest, raisin and fig unfold with ripe orchard fruit, layered over toffee, vanilla and spice from the sherry and bourbon casks. A whisper of maritime char and peat threads through, adding lift, while European oak brings nutty depth. The finish is long, honeyed and subtly smoky, with refined warmth and quiet complexity.
Finish
Long, elegant finish layering sherry sweetness from the first-fill casks with vanilla-tinged bourbon, as raisins and dark chocolate mingle with gentle spice; a maritime sea-air lift lingers as warmth fades.
