Tasting Notes
Colour
Rich amber-gold with a warm coppery glow and a mahogany-tinged edge, suggesting sherried depth.
Nose
Bright lemon barley and melon drift with a whisper of peat smoke. Waxy quince jelly, lemongrass and fresh thyme rise over oily shortbread and fresh barley, giving a polished, cereal-sweet core. Pear drops with a touch of aniseed spice weave through, hinting at something poised and elegant.
Palate
Lemon drizzle cake, shortbread, smoked vanilla pods, barley sugar, herbaceous melon, ginger, lemon thyme, oily smoked almonds, quince jelly, white pepper and a touch of smoke/white ash.
Finish
White pepper, lemongrass, and waxy quince mingle with melon and ginger; sugared almonds toasted over vanillin oak lend a subtle hint of smoke, while singed lemon thyme, barley sweets and pear drops linger.
