Nose
Opulent first-fill sherry unfurls a dense bouquet: dark cherry, plum and sultana weave with fig, cocoa and caramel. Nutty almond and toffee meet warm spice—clove, cinnamon, nutmeg—while polished oak and a whisper of leather add depth. A hint of barley sweetness and a mineral lift echo the Highland cask, yielding a powerful, elegant aromatic profile.
Palate
At cask strength, the palate is densely sherried and luxuriously satiny: raisin, fig and prune fruitcake mingle with orange zest, roasted almond, cocoa and toffee. Concentrated sweetness is offset by a spicy, peppery warmth, building to a long, warming finish with hints of leather and cacao.
