A 30 year old Dalmore which, having been matured in American Oak casks was finished in Matusalem Olorosso Sherry casks, exclusively from Gonzalez Byass. Matusalem sherry casks have since become the signature finishing cask style of the Dalmore and Gonzales Byass even distribute Whyte and Mackay in Spain. The bottle carries the signature of Richard Paterson, the brands master blender and is bottle number 1640.
A big, rich and fruity nose awaits, with cherry, berry, praline and oak. Smooth and supple on the palate with more dark berries and nuttiness. Also evidence of the whiskiy's bourbon cask maturation with oaky spice, vanilla and marzipan evident. The finish is medium, still fruity but slightly drying with a little tannin on the end.

Nose
A lush, expansive nose of ripe cherry and red berries, woven with praline and toasted oak. A soft sherry sweetness from the Matusalem cask lingers, with subtle spice and a hint of almond.
Palate
Silky and generous on the palate, dark berries unfold with roasted nuttiness, while vanilla and oaky spice from the bourbon-cask maturation give a warm, tactile lift. Subtle marzipan and praline weave through the fruit, delivering sweetness with elegance. The finish remains smooth, with a gentle drying tannin that lingers.
Finish
Medium finish that lingers with fruity echoes of dark berries and cherry, softly perfumed by vanilla and marzipan from the oak. A graceful drying note grows at the end, with a delicate tannic edge that tethers sweetness and invites the next sip.
