This is a cask strength Caol Ila finished in Palo Cortado from James Eadie. This sherry wood is a rare choice for whisky maturation, making this release particularly special. Distilled in 2015, this Islay whisky was finished for seven months in a first till Palo Cortado hogshead, with only 356 bottles available.

Tasting Notes

Colour

Dark amber with mahogany hues and copper-gold gleam.

Nose

An maritime, nervy aroma where rusk mingles with seaweed, touched by a fleeting whiff of lighter fluid and acrylic, finishing with a delicate thread of white chocolate.

Palate

On the palate, watercolour sweetness mingles with raisin and moist earth, weaving through spiced wood, apple cake, and bright orange peel. Scallion and sawmill notes emerge, finishing with a hint of salmon.

Finish

Petrol vapour lingers, weaving licorice and barley with soy sauce and shrimp; dough and rubber drift over the wood, finished by a bright, fleeting burst of fireworks.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
