Tasting Notes

Colour

Deep amber-gold with copper undertones and a warm mahogany halo, gleaming with sunlit caramel.

Nose

Grassy, fresh aromas mingle vanilla pods, brine and a whisper of smoke with rich smoked cheese, lemon sherbet and white grapes. A bright, saline lift underpins the peat, hinting at the Palo Cortado sherry finish.

Palate

Gentle peat smoke coats the palate, paired with zesty lemon tart, icing sugar, green apple and chewy toffee. A bright, mouth-filling sweetness with a creamy finish and a citrus sparkle.

Finish

Long wood-fire smoke lingers, pairing sherbet lemon with creamy toffee, leaving a bright, velvety sweetness on the palate.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
