Single Cask

A 2010 Caol Ily, bottled in 2023. This cask strength whisky spent all but its las 12 months maturing in refill bourbon barrel, before transferring to Italian Sassicaia red wine casks.

The classic Sassicaia blend is usually composed of 85% Cabernet Sauvignon and 15% Cabernet Franc. It is aged for a minimum of two years, with 18 months of this period spent in 225-liter oak barrels.

Medjool dates unfold on the nose, paired with sweet cured meats and a lift of pineapple.

Stewed red berry flavours mingle with demerara sugar and lemon zest, yielding a warm, syrupy sweetness with a bright citrus lift and a smooth, lingering mouthfeel.

Finish

A medium-bodied, spicy finish that lingers with citrus peel and the warm glow of bonfire embers.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
