A single cask Caol Ila bottled by Douglas Laing for the Midnight Series within the Old Particular range, this 15 year old was distilled in 2006 and bottled in 2021 from Pedro Ximenez cask number 15193 at 54.6% ABV. Limited to 305 bottles.

Pedro Ximenez cask maturation adds rich dried fruit sweetness and layered spice to Caol Ila’s signature peated Islay character, balancing smoky maritime notes with deeper wine-driven influence in a concentrated single cask release.

Nose

Sea-salted peat and coastal iodine anchor the aroma, while Pedro Ximenez sweetness unfolds. Dried fig, raisin and prune mingle with treacle and toffee, lifted by cinnamon and clove. Toasted oak adds warmth, a subtle leather note, and a final kiss of vanilla, delivering smoky Islay character with wine-dark richness.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
