The other side to Caol Ila, unpeated and slightly sherried in character. Shall we? There have been a few of these unpeated releases but this may well be the best yet.

Breakfast table aromas of baked bread, butter, raspberry jam and marmalade sprint forth out of the glass. The palate is oily, creamy and quite honeyed with a faint cocoa edge. The finish has a little smoke in there (well it is Caol Ila) but nothing dominant and the over riding note is one of creamy creme fraiche.

Colour

Radiant golden amber with honeyed warmth and a subtle copper glow.

Nose

Warm breakfast-bread aromas rise from the glass: baked bread, butter, raspberry jam and marmalade, all softly lifted by a delicate sherry glow. A restrained, inviting sweetness hints at Caol Ila’s unpeated, subtly sherried character.

Palate

Oily, creamy and honeyed on the palate, with a faint cocoa edge and a touch of sherry sweetness that lingers.

Finish

Lightly smoked, never dominant, the finish lingers with a creamy creme fraiche note, touched by cocoa and honey, fading to a soft, velvety warmth.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
