Tasting Notes

Colour

Radiant golden amber with a sunlit, honeyed warmth.

Nose

Peat smoke unfurls with sea-salt brine and iodine, marine and bracing. Bourbon vanilla and toasted oak weave through lemon zest and a whisper of coconut, adding creamy warmth. A mineral, coastal backbone lingers, sealing Islay character with elegant restraint.

Palate

Vanilla and citrus open the palate, sharpened by maritime brine and soft peat. Bourbon cask sweetness—coconut, toffee and spice—threads with iodine and sea-salt, while a creamy mouthfeel carries a warm, long finish of smoke, citrus zest, and pepper.

Finish

Long, coastal finish with enduring peat wrapped in vanilla-caramel from the bourbon cask. Sea-salt and citrus weave through the smoke, tapering to soft oak spice as the echoes linger, leaving a warm, refined glow.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
