Caol Ila Old Particular - Baltersan Castle Limited Edition Whisky 12 Year Old
In stock
This very special bottling is a collaboration between Douglas Laing and the Laird of Baltersan. This exceptional single malt from the Caol Ila distillery was distilled in 2010 and spent 12 years maturing in a single Refill Hogshead. The whisky boasts a bold and distinctive flavour profile, and is bottled at high strength without colouring or chill filtration.
The whisky was bottled to support the restoration of Baltersan Castle, and its transformation into a cultural hub and music school.

Tasting Notes
Colour
Bright gold with sunlit honey tones, a clear, pale-amber rim hinting at delicate oak interaction.
Nose
Coastal peat smoke rises with sea spray and iodine, carried on a breath of malt sweetness. Briny notes merge with citrus zest and vanilla, while mineral notes and a whisper of ash add depth. The high-strength, uncoloured bottling keeps the peat bright, crisp, and unmistakably Caol Ila on the nose.
Palate
Coastal peat coats the palate with medicinal smoke and sea-salt minerals, bold and uncompromising. Bright citrus zest and a hint of vanilla weave through the heat, adding a crisp sweetness that stays in balance with the smoke. Creamy yet drying, it finishes long with ashy smoke, brine and a peppery spice lift.
Finish
Long and maritime, the finish wraps sea-salted peat with mineral smoke, fading into iodine-brine and a whisper of vanilla, with a peppery lift lingering on the palate.
