Caol Ila whisky is different from its Islay neighbours. The smoke is less prominent, for a start. But it's more than that. It's mashing. fermentation regime, stills and the cut points are unique. Caol Ila produces a fruity malt that even people who don't like peat still like. Our Malt Chaser was introduced to peaty whiskies by a well-aged Caol Ila.
This particular cask comes from stock of Caol Ila hogsheads that were-racked into first-fill bourbon casks over 3 years ago. The whisky was cut to 53% alcohol by volume, adding to the flavour and body. This Caol Ila is a must-try, for peat lovers and haters alike.

Tasting Notes
Colour
Bright golden amber with sunlit honey tones and a delicate coppery glow.
Nose
Delicate Caol Ila peat unfurls with sea-air and sun-warmed fruit on the nose. Subtle smoke threads citrus zest, green apple and pear, while bourbon-vanilla and caramel from first-fill casks lend a gentle warmth. A saline, mineral breeze mirrors sea spray, with almond and toffee notes that rise and linger in a maritime, softly sweet bouquet.
Palate
Silky, medium-bodied with vanilla-caramel sweetness from first-fill bourbon. Pear and lemon zest brighten the palate, while a restrained maritime peat keeps the balance airy, not dominant. Subtle oak spice and almond notes emerge, leading to a long, creamy finish edged with sea-salt and a whisper of smoke.
Finish
Long, coastal finish with a whisper of smoke curling around bright citrus and orchard fruit. Vanilla and light oak linger, mingling with a saline, maritime edge as the sweetness fades to a gently warming peppery spice.
