About Sullivans Cove
Sullivans Cove was founded in 1994 on Hobart’s waterfront and is one of the early names in modern Australian single malt. In 2004, the distillery moved to Cambridge and entered a new phase under Patrick Maguire, a period that helped establish the house style and build its reputation well beyond Tasmania. In 2014, Sullivans Cove became the first distillery outside Scotland and Japan to win World’s Best Single Malt at the World Whiskies Awards.
A big part of Sullivans Cove’s identity is its long-term approach to maturation. The distillery has kept whisky in full-size barrels since 1994, which has allowed it to release some of Australia’s oldest whiskies rather than bottling to a fixed timetable. Its single cask bottlings, especially the French Oak releases, have become the best-known part of the range, with French Oak also taking World’s Best honours in 2019. The distillery now operates from Cambridge, Tasmania, where Sullivans Cove continues to build its reputation around rare, long-matured single cask whisky.
