Distillery Bottling

The Irishman 12 Year Old Single Malt is a timeless Irish Malt which is matured in first fill, flame charred Bourbon barrels. Each year we will select only a handful of the best barrels to make ‘the cut’ for our 12 Year Old. A maximum of 6000 bottles will be produced each year. Each bottle comes numbered by batch as a mark of quality and is non-chill filtered.

Tasting Notes

Colour

Rich sunlit amber with coppery highlights and a warm honey-gold glow.

Nose

Sweet, spice-kissed aromas of vanilla and cinnamon, with a tincture of clove. Fresh apples and pears mingle with a touch of charred wood and freshly cut hay, lending a crisp, orchard-bright backdrop.

Palate

Sweet vanilla anchors the palate, lifted by black peppercorns, gradually giving way to a succulent, fruity mid-palate.

Finish

Lingering flavour of barley and oak, with a touch of creamy dairy fudge and dark chocolate.

The Irishman was created by Bernard and Rosemary Walsh as part of Walsh Whiskey’s move into Irish whiskey in the mid-2000s. It was the company’s first whiskey brand, launched in 2007, and it drew on older Irish whiskey styles at a time when the category was still rebuilding its premium reputation.
