Tasting Notes
Colour
Deep amber with copper-gold highlights and a warm mahogany glow.
Nose
Smoked orange and waxy kumquat mingle with salted caramel as peppery oak lends polish; chocolate melts over hot coals with a bonfire-by-the-sea aura, while dried shellfish and a hint of sweet BBQ sauce linger.
Palate
Salt and pepper honey-glazed ribs and smoked ham lead the palate, with waxy citrus, quince jelly, leathery notes, aniseed, and hints of sweet chilli and soy-marinated seafood, all carried by coastal BBQ smoke.
Finish
Peppery smoke lingers, salted caramel sweetness balanced by dry-cured meat and shellfish savoriness. Aniseed, burnt butter and smoked lemon rind thread through a maritime, enduring finish.
