Tasting Notes
Colour
Golden amber with warm honey highlights.
Nose
A bright, honeyed bouquet of vanilla bean and creamy coconut leads into orchard fruit—ripe pear and green apple—lifted by lemon zest. Subtle oak, gentle spice, and delicate florals weave through, with a faint peppery edge from the high ABV. A refined, inviting nose that hints at bold, silky richness to come.
Palate
Silky vanilla, honeyed toffee and a kiss of coconut from the ex-bourbon hogsheads mingle with pear and green apple. Ginger and cinnamon bring a gentle spice, citrus zest lifts the mid-palate, and polished oak lends structure. The finish is warm and long, with almondy notes lingering as a refined, fruity glow.
Finish
Long and elegant, the finish carries honeyed vanilla and creamy toffee from the ex-Bourbon hogshead, tempered by gentle toasted oak. Citrus zest and almond drift in, lifted by a crisp peppery spice, before a warming coastal oak glow lingers, with a touch of dried fruit and a refined, persistent sweetness.
