Kaiyō is a whisky brand built around Japanese Mizunara oak maturation, with the name meaning “ocean” in Japanese. Rather than focusing on a named distillery, Kaiyō is best known for its use of handmade Mizunara oak casks, a rare and difficult wood that can bring sandalwood, incense, coconut, spice and aromatic oak notes to whisky.
